How to Save Yourself from Crappy Pizza

If you can relate to this picture, I have a solution for you. Have you ever been to a fast food joint that starts with rice, adds a protein, then some veggies, then salsa…of course you have.

Psst…here’s a secret…it’s even better if you make it at home.

Shocking, I know. But it’s true. You can choose higher quality ingredients, you can add more vegetables, use proteins that work for your body, and top it with fresh salsa from your garden or local farmers market. Also, it will last for days and your wallet will appreciate the break.

Here’s my process:

  1. Pick a grain and start cooking. It could be white, brown or wild rice. Maybe quinoa or couscous. Add spices or cook in vegetable broth to add flavor. Stir in fresh herbs when it’s finished.
  2. Cook your proteins. You can’t go wrong with beans, tofu or tempeh. It’s your rice bowl. Make something you love. Put it in a bowl and add it to the table next to your grains.
  3. Make some simple, fresh salsa. You can get fancy and complicated or keep it simple with tomatoes, red onions, jalapeños (or not if that’s too hot), peaches, cilantro and lime juice. I love a combination of pineapple, limes…
